Kohlrabi-Beet Pancakes

Remember those spherical octopus vegetables I told you about?

I know you’re dying to use them. Well then, today’s your day!  This is a super easy recipe that just comes from throwing things together and hoping they stick – literally.

This is one of those recipes where pretty much anything goes. Carrots, zucchini, squash – any grate-able vegetable can go in this mix. Except I might stay away from potatoes, as those would take longer to cook. But they could also be crunchy… so it’s up to you!

I kinda went with an asian flair for this recipe, but you can adjust it however you’d like. To move away from the asian flavors, omit the ginger juice and substitute olive oil for coconut oil. I want to try a variation with cilantro into the mix and topped with lime juice!

The best part about this recipe is that everything turns fuchsia. Including your fingers.

What the Heck is Kohlrabi?

They’re edible!

And though you’ll rarely see them at the grocery store, they’re a common find at farmers’ markets. I feel like they’re kind of the mascot of farmers’ markets, because they’re always there but people rarely know what to do with them. Yeah they’re cool looking, but how do you eat?? Then the people that do get them from CSA’s or farmers’ markets are so proud that they’re in the know and can impress everyone with their healthful kohlrabi dance.

Anyway, I can’t tell you how many times I’ve heard people at the Quarter Branch stand go, “Woah what’s that? Oh it’s kohlrabi? What’s kohlrabi? What do you do with it? I don’t know either. K,” and walk away. Unless I intercept them and dump whatever kohlrabi knowledge I have on them. Then they usually still don’t buy it. But don’t be afraid of this bulbous little gem, there’s a multitude of ways you can use it.
